Ingredients
  

1 lb (450g) chicken breast, diced

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

1 tablespoon fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon ground cumin

4 cups low-sodium chicken broth

1 can (15 oz) coconut milk

1 cup kale, chopped

Juice of 1 lemon

Salt and pepper to taste

Fresh cilantro and lemon wedges for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, grated ginger, sliced carrots, and celery. Cook for an additional 5 minutes, letting the vegetables soften.

      Add the diced chicken breast to the pot, cooking until the chicken is no longer pink, approximately 5-7 minutes.

        Sprinkle the turmeric and cumin over the chicken and vegetables, stirring to coat them well.

          Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes.

            Stir in the coconut milk and chopped kale, cooking for another 5 minutes until the kale is wilted and tender.

              Squeeze the juice of one lemon into the soup and season with salt and pepper to taste.

                Serve hot, garnished with fresh cilantro and lemon wedges on the side.
