4 large eggs

2 tablespoons chipotle sauce (or to taste)

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

1/2 cup cooked black beans

1/2 cup shredded cheese (cheddar or pepper jack)

4 whole wheat tortillas

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Cooking oil (for sautéing)

Instructions
 

Prep the Vegetables: Dice the bell pepper and onion. Set aside.

    Whisk the Eggs: In a bowl, crack the eggs and whisk them together with the chipotle sauce, salt, and pepper until well combined.

      Sauté the Veggies: In a skillet, heat a little cooking oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until they are softened.

        Add the Eggs: Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are fully scrambled and cooked through, about 5 minutes.

          Incorporate the Beans: Gently fold in the cooked black beans and shredded cheese, allowing the cheese to melt slightly.

            Warm the Tortillas: In a separate skillet or microwave, warm the whole wheat tortillas for a few seconds until pliable.

              Assemble the Wraps: Place a generous scoop of the spicy egg mixture on each tortilla. Top with avocado slices and sprinkle with fresh cilantro.

                Roll the Wraps: Fold in the sides of the tortilla and roll it up tightly from one end. Repeat with the remaining tortillas.

                  Serving Suggestion: Cut each wrap in half and serve with additional chipotle sauce or salsa on the side.
