2 pounds ripe tomatoes, chopped

1 cup sugar

1/2 cup apple cider vinegar

1/4 cup finely chopped red onion

2 garlic cloves, minced

1-2 teaspoons red pepper flakes (adjust for heat preference)

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 tablespoon olive oil

Zest and juice of 1 lemon

Instructions
 

In a large, heavy-bottomed pot, heat the olive oil over medium heat.

    Add the chopped red onion and minced garlic; sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

      Stir in the chopped tomatoes, followed by the sugar, apple cider vinegar, salt, black pepper, and red pepper flakes.

        Bring the mixture to a simmer, then reduce the heat to low. Stir occasionally to prevent burning, and let it cook for about 45-60 minutes, or until it thickens to a jam-like consistency.

          Once thickened, remove from heat and mix in the lemon zest and juice.

            Carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal tightly and process in a water bath if desired for long-term storage.

              Allow the jam to cool to room temperature before refrigerating.
