2 cups sushi rice

2 ½ cups water

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 pound sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (or to taste)

1 avocado, sliced

2 green onions, finely chopped

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon sesame seeds

Seaweed sheets (nori), cut into strips for garnish

Oil for frying (vegetable or canola)

Instructions
 

Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    In a pot, combine rinsed sushi rice and 2 ½ cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

      In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and gently fold the vinegar mixture into the rice. Allow it to cool to room temperature.

        Meanwhile, prepare the spicy tuna mixture. In a bowl, combine diced tuna, mayonnaise, sriracha, and sesame oil. Mix gently until the tuna is well coated. Adjust sriracha according to your spice preference.

          Once the rice has cooled, wet your hands to prevent sticking and take a small handful of rice. Form it into rectangular shapes or small patties, about 1-inch thick.

            In a frying pan, heat oil over medium-high heat. Once hot, carefully add the rice patties, cooking until golden brown and crispy on one side (about 2-3 minutes). Flip and repeat on the other side. Drain on paper towels.

              To assemble, place a crispy rice patty on a serving plate. Top with a generous scoop of the spicy tuna mixture.

                Garnish with sliced avocado, chopped green onions, and a sprinkle of sesame seeds. Add strips of nori on the side for extra crunch and flavor.
