1 cup snap peas, trimmed

1 cup asparagus, chopped into 2-inch pieces

1 cup bell peppers (mixed colors), sliced

1 cup baby carrots, halved

1 cup broccoli florets

1 cup shiitake mushrooms, sliced

2 tablespoons vegetable oil

2 cloves garlic, minced

1 inch piece of ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Prepare all the vegetables by washing and cutting them into bite-sized pieces as indicated.

    Heat the vegetable oil in a large wok or a non-stick skillet over medium-high heat.

      Once the oil is hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

        Add the snap peas and asparagus to the wok, stir-frying for 2-3 minutes until they start to soften.

          Combine the bell peppers and baby carrots into the mix. Stir everything together for an additional 3 minutes.

            Add the broccoli florets and shiitake mushrooms, then stir-fry for another 2 minutes until all the vegetables are vibrantly colored and tender-crisp.

              Pour in the soy sauce and sesame oil, tossing the vegetables to ensure they are evenly coated. Sauté for another minute.

                Season with salt and pepper to taste, and then remove from heat.

                  Transfer the stir-fry to a serving platter and sprinkle with sesame seeds.
