2 ribeye steaks (about 1-inch thick)

Salt and freshly ground black pepper

4 tablespoons unsalted butter, room temperature

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon garlic powder

1 tablespoon Dijon mustard

2 large russet potatoes

2 tablespoons olive oil

Optional: Fresh herbs like thyme or rosemary for garnish

Prepare the Herb Butter: In a small bowl, combine soft butter, parsley, chives, garlic powder, and Dijon mustard. Mix until well blended. Form into a log shape using plastic wrap and refrigerate until firm (about 30 minutes).

    Preheat the Oven: Preheat your oven to 400°F (200°C) for the fries.

      Prepare the Potatoes: Wash and peel the russet potatoes. Cut them into thin fries (about 1/4 inch thick). Soak the fries in cold water for 30 minutes, then drain and pat dry with a towel.

        Season and Bake the Fries: In a large bowl, toss the dried fries with olive oil, a pinch of salt, and pepper. Spread them out in a single layer on a lined baking sheet and bake for about 30-35 minutes, flipping halfway through, until golden and crispy.

          Cook the Steaks: While the fries are baking, heat a skillet or grill pan over medium-high heat. Season both sides of the ribeye steaks generously with salt and pepper. When the pan is hot, add the steaks. Cook for 4-5 minutes on each side for medium-rare, adjusting time based on your preference.

            Add the Herb Butter: During the last minute of cooking, add a tablespoon of the herb butter on top of each steak, allowing it to melt and baste the meat.

              Rest the Steaks: Remove the steaks from the pan and let them rest for about 5 minutes on a cutting board. This allows the juices to redistribute.

                Serve: Slice the steaks against the grain, if desired, and serve alongside the crispy fries. Top each steak with an additional pat of herb butter and garnish with fresh herbs.
