Ingredients

1 lb flank steak

4 ciabatta rolls

1 cup arugula (or spinach)

1 medium tomato, sliced

1 small red onion, thinly sliced

Salt and pepper, to taste

Olive oil, for grilling

For the Garlic Aioli:

1/2 cup mayonnaise

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions

Prepare the Garlic Aioli: In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Whisk until smooth and creamy. Adjust seasoning to taste, then refrigerate to let the flavors meld.

Cook the Steak: Preheat your grill or skillet over medium-high heat. Season the flank steak with olive oil, salt, and pepper on both sides. Grill the steak for about 4-5 minutes each side for medium-rare, depending on thickness. Use a meat thermometer to ensure the internal temperature is around 130°F. Remove from heat and let rest for 5-10 minutes.

Slice the Steak: After resting, slice the flank steak against the grain into thin strips. This will help maintain tenderness and make it easier to bite into the sandwich.

Toast the Ciabatta Rolls: While the steak is resting, cut the ciabatta rolls in half and toast them on the grill or in a toaster till golden brown.

Assemble the Sandwich: Spread a generous amount of garlic aioli on the inside of each ciabatta roll. Layer the arugula, slices of grilled steak, tomato, and red onion on the bottom half of each roll.

Finish and Serve: Place the top half of the roll over the fillings, pressing down gently. Serve immediately, offering extra garlic aioli on the side for dipping if desired.
