1.5 lbs chicken thighs, boneless and skinless

1/4 cup gochujang (Korean chili paste)

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon rice vinegar

1 tablespoon cornstarch

1 tablespoon water

2 green onions, sliced (for garnish)

In a medium bowl, whisk together gochujang, honey, soy sauce, sesame oil, minced garlic, ginger, and rice vinegar until well combined.

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat your grill or a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later use.

        Cook the chicken on the preheated grill or skillet for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely browned.

          While the chicken is cooking, prepare the sauce. In a small saucepan, heat the reserved marinade over medium heat.

            In a separate bowl, mix cornstarch and water to create a slurry, then stir it into the sauce. Bring to a simmer and cook for 3-4 minutes, until it thickens to a sticky consistency.

              Once the chicken is cooked, remove it from the heat and brush the thickened sauce generously over the chicken, letting it sit for a couple of minutes to let the sauce adhere.

                Slice the chicken and arrange it on a serving platter. Drizzle any leftover sauce over the top, then garnish with sliced green onions and sesame seeds.
