1 cup all-purpose flour

1/2 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup powdered sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup fresh strawberries, pureed

1 cup cream cheese, softened

1/4 cup powdered sugar (for filling)

1/2 teaspoon lemon zest

Extra fresh strawberries for decoration (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.

        Add the egg and vanilla extract to the butter mixture, mixing until well combined.

          Gently mix in the strawberry puree until evenly distributed.

            Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.

              Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.

                Bake for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                  While the cookies are cooling, prepare the filling by mixing the cream cheese, powdered sugar, and lemon zest in a bowl until smooth and creamy.

                    Once the cookies are completely cool, spread about 1 tablespoon of the cream cheese filling on the flat side of one cookie and sandwich it with another cookie, pressing gently. Repeat with the remaining cookies.

                      If desired, top each sandwich cookie with a slice of fresh strawberry for added flair.
