1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup Greek yogurt

1 cup fresh strawberries, hulled and diced

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)

Fresh strawberries and mint leaves for garnish

Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and continue mixing until well combined. Stir in the vanilla extract and Greek yogurt until smooth and creamy.

    Incorporate Strawberries: Gently fold the diced strawberries into the cheesecake mixture until evenly distributed. Set the mixture aside.

      Make the Crunch Base: In a separate bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until the crumbs are evenly coated and resemble wet sand.

        Assemble the Bites: Take a small silicone mold or mini muffin tin and press a layer of the graham cracker mixture into the bottom of each cavity to form a base. Use your fingers or the back of a spoon to pack it down firmly.

          Add the Cheesecake Mixture: Spoon the cheesecake filling on top of the graham cracker base, filling each cavity to the top.

            Top with Crunch: Add a second layer of the remaining graham cracker mixture on top of the cheesecake layer, pressing it down gently to secure it. If desired, sprinkle mini chocolate chips on top for extra crunch.

              Chill: Place the mold or tin in the fridge and let the bites chill for at least 4 hours, or until set.

                Serve: Once set, carefully pop the cheesecake bites out of the mold. Garnish with fresh strawberry slices and mint leaves for a refreshing touch.
