2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1 cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons fresh lemon juice

1 tablespoon gelatin powder

3 tablespoons cold water

Optional garnish: additional strawberries and mint leaves

Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Allow it to sit for about 5 minutes until it blooms, then gently heat in the microwave for 10-15 seconds until dissolved. Set aside to cool slightly.

    Make the Cream Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
