Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup fresh strawberries, pureed

1 cup fresh strawberries, diced (for topping)

1 cup whipped cream cheese frosting (store-bought or homemade)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard cupcake pan with cupcake liners.

Mix Wet Ingredients: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Add Buttermilk and Strawberry Puree: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk and strawberry puree, starting and ending with the flour mixture. Mix until just combined.

Fill Cupcake Liners: Gently fold in the diced strawberries. Spoon the batter into the lined cupcake pan, filling each liner about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Frost: Once cooled, pipe or spread the whipped cream cheese frosting generously on top of each cupcake.

Garnish: Top each frosted cupcake with a few diced strawberries for a fresh and vibrant look.
