Strawberry Jam

2 pounds fresh strawberries, hulled and chopped

1 ½ cups granulated sugar

2 tablespoons lemon juice

1 teaspoon lemon zest

1 packet fruit pectin (1.75 oz)

¼ teaspoon salt

Instructions
 

In a large mixing bowl, combine the chopped strawberries and sugar. Stir well and let this sit for about 15 minutes to allow the strawberries to release their juices.

    Transfer the strawberry and sugar mixture into a large saucepan and add the lemon juice and salt. Cook over medium heat, stirring occasionally until the sugar dissolves completely.

      Once the mixture is bubbling, add the fruit pectin and stir thoroughly. Bring the mixture to a rolling boil, stirring constantly, and boil for exactly 1 minute.

        Remove the saucepan from heat and gently stir in the lemon zest. This will enhance the citrusy flavor of your jam.

          Skim off any foam that rises to the surface using a spoon.

            Pour the jam into sterilized jars while hot, leaving about ¼ inch of headspace at the top. Seal the jars with lids.

              Allow the jars to cool to room temperature, then refrigerate if not canning for long-term storage.
