2tablespoonsmelted butter (plus extra for cooking)
1cupNutella
1cupfresh strawberries, sliced
to tasteWhipped cream, for serving (optional)
to tasteFresh mint leaves, for garnish (optional)
Instructions
In a medium mixing bowl, whisk together the flour, sugar, and salt until well combined.
In another bowl, whisk the eggs and then add the milk and melted butter. Mix until smooth.
Gradually pour the wet mixture into the dry ingredients, stirring gently to avoid lumps. The batter should be thin and smooth. Let the batter rest for about 30 minutes at room temperature.
Heat a non-stick skillet or crepe pan over medium heat and brush lightly with melted butter.
Pour about 1/4 cup of crepe batter into the pan, tilting the pan to spread the batter evenly in a thin layer.
Cook the crepe for about 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Carefully flip the crepe and cook for another 1 minute on the other side. Transfer to a plate and cover to keep warm. Repeat with the remaining batter.
To assemble, spread a generous tablespoon of Nutella onto one half of each crepe. Top with sliced strawberries.
Fold the crepe in half, then in half again to create a triangle. Optionally, drizzle with whipped cream and garnish with fresh mint leaves.
