1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs

1 cup granulated sugar

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

1 cup heavy cream

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon lemon juice

1 teaspoon vanilla extract (for cheesecake layer)

1 ½ cups fresh strawberries, sliced

Additional powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a 15x10 inch jelly roll pan with parchment paper and spray lightly with cooking spray.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

      In a large mixing bowl, beat the eggs and granulated sugar together with an electric mixer on high speed until thick and pale (about 3-5 minutes). Mix in the vanilla extract and melted butter.

        Gradually add the flour mixture to the egg mixture, folding gently until just combined. Pour the batter into the prepared jelly roll pan, spreading evenly.

          Bake for 12-15 minutes or until golden and a toothpick comes out clean. Remove from the oven and let cool for about 5 minutes.

            Dust a clean kitchen towel with powdered sugar. Carefully flip the cake onto the towel, peel off the parchment paper, and roll it up with the towel. Allow it to cool completely in this rolled shape.

              While the cake cools, prepare the cheesecake filling. In a bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the cream cheese, powdered sugar, lemon juice, and vanilla extract together until smooth.

                Gently fold the whipped cream into the cream cheese mixture until combined.

                  Once the cake has cooled, carefully unroll it. Spread the cheesecake filling evenly over the cake, leaving about an inch around the edges. Arrange the sliced strawberries on top of the cheesecake layer in a single even layer.

                    Carefully roll the cake back up without the towel, starting from one of the short ends. Wrap the rolled cake in plastic wrap, and refrigerate for at least 2 hours to set.

                      Before serving, dust with powdered sugar if desired, and slice the roll into pieces for serving.
