2 cups strawberries, hulled and sliced

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

1 tablespoon powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 store-bought pound cake or sponge cake, cut into cubes

1 cup vanilla pudding (prepared)

Fresh mint leaves for garnish

In a mixing bowl, combine the sliced strawberries with granulated sugar and 1 teaspoon of vanilla extract. Toss gently and let sit for about 15 minutes to allow the strawberries to release their juices.

    In a separate bowl, whip the heavy cream with a handheld mixer until it begins to thicken. Add the powdered sugar and 1 teaspoon of vanilla extract. Continue beating until stiff peaks form.

      In serving glasses or bowls, start layering the trifle: Begin with a layer of the cubed pound cake at the bottom.
