2 large salmon fillets, skinless

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon lemon juice

1 teaspoon dried dill

Salt and pepper to taste

1 tablespoon olive oil

Zest of 1 lemon

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium mixing bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, minced garlic, lemon juice, dill, lemon zest, salt, and pepper. Mix well until fully incorporated.

      Lay the salmon fillets skin side down on a cutting board. Carefully spread the spinach and ricotta mixture evenly over each fillet.

        Starting from one end of the fillet, tightly roll the salmon into a pinwheel shape, securing the filling inside. Use toothpicks or tie with kitchen twine to hold the roll together.

          Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the salmon pinwheels to the skillet and sear for about 2-3 minutes on each side until they begin to brown.

            Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Carefully remove the toothpicks or twine before serving. Slice the pinwheels into bite-sized pieces if desired.
