4 sole fillets (about 6 ounces each)

8 oz. sea scallops, chopped

6 oz. lump crabmeat, picked for shells

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup cream cheese, softened

1/4 cup chopped shallots

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper, to taste

2 tablespoons olive oil

Zest of 1 lemon

1/2 teaspoon paprika (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped shallots and minced garlic until fragrant, about 2-3 minutes.

      Mix Ingredients: In a mixing bowl, combine the sautéed shallots and garlic with chopped scallops, crabmeat, cream cheese, breadcrumbs, parsley, lemon juice, lemon zest, Dijon mustard, salt, and pepper. Mix until well combined.

        Assemble the Sole: Lay the sole fillets on a clean surface. Place an equal portion of the filling on one half of each fillet. Fold the other half over the filling to create a pocket.

          Prepare for Baking: Arrange the stuffed sole in a greased baking dish, seam side down. Drizzle with the remaining olive oil and sprinkle paprika on top for color.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the sole is cooked through and flakes easily with a fork.

              Serve: Once cooked, remove from the oven and let it rest for 5 minutes before serving.
