2 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 tablespoon vanilla extract

1 teaspoon almond extract (optional)

½ cup sprinkles (for added color)

1 cup frosting (your choice, for filling)

Fresh fruit or edible flowers (for garnish, optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a mini muffin pan with non-stick spray or butter.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.

        Beat in the egg, vanilla extract, and almond extract (if using) until well combined.

          Gradually mix in the dry ingredient mixture until just combined; don’t overmix. Fold in the sprinkles gently.

            Scoop about 1 tablespoon of the cookie dough into each muffin cup, filling them about ¾ of the way full.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.

                Remove the cookie cups from the oven and allow them to cool for about 5 minutes. Using the back of a measuring spoon, gently press into the center of each cookie to create a cup shape.

                  Let the cookie cups cool completely on a wire rack.

                    Once cooled, fill each cookie cup with frosting using a piping bag or a spoon. Top with fresh fruit or edible flowers for extra flair.
