Ingredients

1 cup fresh or frozen blueberries

1 tablespoon sugar-free syrup (such as vanilla or blueberry)

1 cup club soda (chilled)

1/2 cup heavy cream or coconut cream

Ice cubes

Fresh mint leaves for garnish

Optional: lemon slices for garnish

Instructions

If using fresh blueberries, rinse and drain them. For frozen blueberries, allow them to thaw slightly.

In a blender, combine the blueberries and sugar-free syrup. Blend until smooth for about 1 minute. You can strain this mixture through a fine sieve if you prefer a smoother texture without the pulp.

In a serving glass, fill it halfway with ice cubes.

Pour the blueberry syrup mixture over the ice, filling the glass about one-third full (adjust to your preference).

Slowly add the chilled club soda, filling the glass to about two-thirds full. Gently stir the mixture to combine.

In a separate bowl, whisk or froth the heavy cream until slightly thickened. Then, carefully layer the frothed cream on top of the soda mixture, making it look swirled and creamy.

Garnish with fresh mint leaves and a slice of lemon if desired.

Serve immediately with a straw or spoon and enjoy your refreshing Italian cream soda!
