1 cup sun-dried tomatoes (packed in oil, drained)

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons fresh basil, chopped

1 tablespoon garlic, minced

1 tablespoon lemon juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons pine nuts, toasted (for garnish)

Instructions
 

Begin by placing the sun-dried tomatoes in a food processor and pulse until they are finely chopped.

    Add the softened cream cheese and Greek yogurt to the food processor. Blend them together until smooth and creamy.

      Incorporate the chopped fresh basil, minced garlic, lemon juice, and red pepper flakes if using. Blend until the ingredients are well combined.

        Season the spread with salt and pepper to taste. If you prefer a thinner consistency, add a little water or more yogurt until you reach your desired texture, blending in between.

          Transfer the sun-dried tomato spread to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

            Before serving, toast the pine nuts in a dry skillet over medium heat for about 2-3 minutes, stirring frequently until golden brown.

              Garnish the spread with toasted pine nuts and an extra sprinkle of fresh basil.
