12 oz pasta (spaghetti or penne)

1 cup sun-dried tomatoes packed in oil, drained and chopped

½ cup fresh basil leaves

¼ cup toasted pine nuts

¼ cup grated Parmesan cheese

2 cloves garlic, minced

½ teaspoon red pepper flakes (adjust for spice level)

½ cup olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and reserve ½ cup of the pasta cooking water.

    Prepare the Pesto: In a food processor, combine the sun-dried tomatoes, basil leaves, toasted pine nuts, Parmesan cheese, minced garlic, and red pepper flakes. Pulse until coarsely blended.

      Add Olive Oil: With the food processor running, slowly drizzle in the olive oil until the mixture is well combined but still slightly chunky. If the pesto is too thick, add reserved pasta water a tablespoon at a time until you reach the desired consistency.

        Combine: In a large bowl, toss the cooked pasta with the sun-dried tomato pesto until the pasta is well coated. Season with salt and pepper to taste.

          Serve: Plate the pasta and garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired.
