2 cups fresh sweet corn, kernels removed from the cob

1 cup ricotta cheese

1/2 cup grated parmesan cheese

1 egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1 pack of fresh pasta sheets or wonton wrappers

2 tablespoons olive oil

1 clove garlic, minced

1/4 cup fresh basil, chopped

Zest of 1 lemon

Extra parmesan for serving

Prepare Filling: In a food processor, blend the sweet corn kernels until they are coarsely chopped (but not pureed). Transfer to a large mixing bowl.

    Mix Ingredients: Add ricotta cheese, grated parmesan, beaten egg, salt, black pepper, basil, and lemon zest to the bowl with the corn. Stir until well combined.

      Assemble Ravioli: Lay out one pasta sheet or wonton wrapper on a clean surface. Place a teaspoon of the filling in the center. Moisten the edges with a little water and fold the pasta over to form a triangle, pressing to seal the edges. Repeat until all filling is used.

        Cook Ravioli: Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes or until they float to the surface.

          Make Sauce: While the ravioli cooks, heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

            Combine & Serve: Once the ravioli is cooked, use a slotted spoon to transfer them to the pan with garlic oil. Toss gently to coat. Serve immediately with extra parmesan on top.
