2 medium sweet potatoes, peeled and diced

4 slices of bacon, chopped

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

4 large eggs

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, cook the chopped bacon over medium heat until crispy. This should take about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel to drain, leaving the bacon fat in the skillet.

    In the same skillet, add the diced sweet potatoes. Sauté them in the bacon fat for about 10 minutes, stirring occasionally, until they begin to soften.

      Add the diced onion and red bell pepper to the skillet. Continue to cook for another 5 minutes, allowing the vegetables to soften and become fragrant.

        Stir in the minced garlic, smoked paprika, and cumin. Cook for an additional 2-3 minutes until the garlic is fragrant, and the spices have melded with the vegetables. Season with salt and pepper to taste.

          While the hash is cooking, in a separate pan, fry the eggs sunny-side up or to your desired doneness.

            Once the sweet potato mixture is cooked through and slightly crispy, remove the skillet from heat. Gently stir in the crispy bacon.

              To serve, divide the sweet potato hash among plates and top each with a fried egg. Sprinkle with chopped fresh parsley for added color and flavor.
