Ingredients

4 cups water

2 tablespoons dried hibiscus flowers

1 cup fresh or frozen cherries, pitted

1 tablespoon fresh ginger, grated

2-3 tablespoons honey or agave syrup (adjust for sweetness)

1 teaspoon ground cinnamon

1 teaspoon cayenne pepper (adjust for spice preference)

3 tablespoons lemon juice

Ice cubes

Fresh mint leaves for garnish

Instructions

In a medium saucepan, bring the water to a boil.

Once boiling, remove from heat and add the dried hibiscus flowers, grated ginger, and ground cinnamon. Allow the mixture to steep for about 10 minutes.

While the tea is steeping, in a blender, combine the cherries and honey (or agave) with a splash of the warm hibiscus tea. Blend until smooth to create a cherry puree.

After steeping, strain the hibiscus tea into a large pitcher, discarding the flower solids.

Stir in the cherry puree and cayenne pepper into the pitcher. Mix well to combine all flavors.

Add the lemon juice and stir again, adjusting sweetness with more honey if needed.

Let the mixture cool to room temperature, then refrigerate until chilled.

To serve, fill glasses with ice cubes and pour the chilled cherry ginger tea over the ice. Garnish with fresh mint leaves.
