1 lb ground beef or turkey

1 packet taco seasoning

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or canned)

1 1/2 cups shredded cheese (cheddar or Mexican blend)

1 package wonton wrappers (24 count)

1 cup diced tomatoes

1/2 cup diced red onion

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional toppings: jalapeños, avocado, lime wedges, salsa

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, brown the ground beef or turkey, breaking it apart as it cooks. Drain any excess fat.

      Sprinkle the taco seasoning over the meat and add a little water as per the package instructions. Stir well to combine and let simmer for about 5 minutes.

        In a large bowl, combine the cooked meat, black beans, corn, half of the shredded cheese, diced tomatoes, and season with salt and pepper to taste. Mix thoroughly.

          Lightly spray a cupcake or muffin pan with cooking oil. Take one wonton wrapper and gently press it into each muffin cavity, creating a cup shape.

            Fill each wonton cup with the taco mixture, packing lightly.

              Sprinkle the remaining cheese on top of each filled cup.

                Bake in the preheated oven for 12-15 minutes, or until the wonton wrappers are crispy and the cheese is melted and bubbly.

                  Once done, remove from the oven and let cool for a few minutes before carefully lifting the taco cups out of the pan.

                    Top each taco cup with a dollop of sour cream, diced red onion, and chopped cilantro. Add any additional toppings like jalapeños or avocado if desired.
