12 oz cheese tortellini (fresh or frozen)

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes, undrained

1 can (16 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 packet taco seasoning

2 cups chicken broth

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Salt and pepper to taste

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes, until the vegetables are softened.

    Add the ground beef (or turkey) to the pot, breaking it up with a spatula. Cook until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.

      Stir in the taco seasoning, cooking for another minute to toast the spices.

        Add the diced tomatoes (with their juices), black beans, corn, and chicken broth. Bring the mixture to a gentle simmer.
