Tanghulu (Chinese Candied Fruit)

Ingredients
  

1 cup of water

2 cups of granulated sugar

1 tablespoon of corn syrup (optional, for a smoother texture)

1 cup of strawberries, washed and dried

1 cup of grapes, washed and dried

1 cup of mandarin oranges, peeled

1 cup of small skewers or toothpicks

Instructions
 

Prepare a baking sheet lined with parchment paper and set aside.

    In a medium saucepan, combine the water, granulated sugar, and corn syrup (if using). Stir over medium heat until the sugar dissolves.

      Increase the heat to high and bring the mixture to a boil without stirring. Cook until it reaches a temperature of 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes. Keep an eye on it to avoid burning.

        While the syrup is cooking, carefully skewer the prepared fruits onto sticks. Use one type of fruit per skewer or mix them for colorful variety.

          Once the syrup reaches the hard crack stage, remove it from the heat immediately. Let it cool for about 1-2 minutes; it should still be pourable.

            Quickly dip each skewer of fruit into the hot syrup, ensuring it's fully coated. Allow any excess syrup to drip off.

              Place the dipped skewers onto the prepared baking sheet, ensuring they are not touching to prevent sticking.

                Allow the Tanghulu to cool completely at room temperature, which will cause the syrup to harden and form a shiny candy shell.

                  Serve the Tanghulu immediately or store in an airtight container for up to 2 days.
