2 cups frozen tater tots

4 large eggs

½ cup shredded cheddar cheese

¼ cup diced cooked ham or bacon (optional)

1 small bell pepper, diced

¼ cup green onions, sliced

2 tablespoons olive oil

Salt and pepper to taste

¼ teaspoon smoked paprika (optional)

Hot sauce, for serving (optional)

Instructions
 

Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a baking sheet and bake for about 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.

    While the tater tots are baking, heat olive oil in a skillet over medium heat. Add the diced bell pepper and sauté for about 3-4 minutes until softened.

      If using, add the diced ham or bacon to the skillet and cook until just heated through, around 2 minutes. Remove the veggies and meat from the skillet and set aside.

        In the same skillet, crack the eggs and season with salt, pepper, and smoked paprika. Cook sunny-side up or scrambled to your preference.

          Once the tater tots are done, remove them from the oven. In a large bowl or individual serving bowls, layer the crispy tater tots, sautéed bell peppers and ham/bacon, followed by the cooked eggs.

            Sprinkle shredded cheddar cheese over the top and return the bowls to the oven for an additional 2-3 minutes to melt the cheese.

              Finish the bowls by garnishing with sliced green onions and drizzling with hot sauce if desired.
