Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine ground chicken or turkey, breadcrumbs, half of the green onions, minced garlic, grated ginger, soy sauce, sesame oil, honey, and black pepper. Mix until just combined.
Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet. Bake for 15-20 minutes, or until cooked through and browned.
Meanwhile, cook the egg noodles or rice noodles according to package instructions. Drain and set aside.
In a large skillet, heat a teaspoon of sesame oil over medium-high heat. Add broccoli and carrot, stir-frying for about 3-4 minutes until tender but still crisp.
Add the cooked noodles to the skillet with the vegetables. Gently toss in the baked meatballs. Drizzle with additional soy sauce and honey if desired, and mix until everything is well combined and heated through.
Plate the noodles and meatballs. Sprinkle with sesame seeds and the remaining green onions for a fresh, vibrant presentation.
