THAI CHICKEN NOODLE SOUP

2 boneless, skinless chicken breasts

4 cups chicken broth

200g rice noodles

1 can (400ml) coconut milk

1 tablespoon red curry paste

1 tablespoon fish sauce

1 tablespoon lime juice

2 cups bok choy, chopped

1 red bell pepper, thinly sliced

1 carrot, julienned

3 green onions, sliced

2 cloves garlic, minced

1 thumb-sized piece of ginger, grated

Fresh cilantro leaves for garnish

Salt and pepper to taste

Lime wedges for serving

Instructions
 

Start by boiling the chicken breasts in a pot of salted water for about 15-20 minutes or until fully cooked. Once done, shred the chicken and set it aside.

    In a large pot, pour in the chicken broth and bring it to a gentle boil over medium heat.

      Add the minced garlic and grated ginger to the broth, stirring occasionally for about 2 minutes until fragrant.

        Stir in the red curry paste and cook for another minute, allowing the flavors to meld together.

          Pour in the coconut milk and bring the mixture back to a simmer.

            Add the fish sauce, lime juice, and shredded chicken to the pot, followed by the bok choy, red bell pepper, and carrot. Cook for an additional 5-7 minutes until the vegetables are tender.

              While the soup is simmering, prepare the rice noodles according to package instructions and drain them.

                Once the vegetables are cooked, gently fold the prepared noodles into the soup, mixing well to combine.

                  Adjust seasoning with salt and pepper based on your taste preference.

                    Serve the soup hot, garnished with chopped green onions, fresh cilantro leaves, and lime wedges on the side for an extra zing.
