1 lb (450g) large shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce (or soy sauce for a vegetarian option)

1 tablespoon brown sugar

1 tablespoon lime juice

1 red bell pepper, sliced

1 cup snap peas

1 small onion, sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon vegetable oil

Fresh basil leaves, for garnish

Cooked jasmine rice, for serving

Instructions
 

In a large skillet or wok, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, sautéing for about 3 minutes until fragrant and the onion is translucent.

    Stir in the red curry paste and cook for an additional 1-2 minutes to release its flavors.

      Pour in the coconut milk, fish sauce, brown sugar, and lime juice, stirring to combine thoroughly.

        Add the sliced bell pepper and snap peas, and let the mixture simmer for about 5 minutes, allowing the vegetables to soften slightly.

          Gently fold in the shrimp and cook for another 4-5 minutes until they turn pink and opaque. Be careful not to overcook the shrimp.

            Taste and adjust seasoning, adding more lime juice or fish sauce if necessary.

              Once done, remove from heat and stir in fresh basil leaves before serving.
