1/2 cup (1 stick) unsalted butter, melted

1/2 cup brown sugar, packed

1 can (20 oz) sliced pineapple in juice, drained and juice reserved

Maraschino cherries, for garnish

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup milk (or reserved pineapple juice for extra flavor)

2 large eggs

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp vanilla extract

Preheat your oven to 350°F (175°C). Grease a round 9-inch cake pan with a bit of butter or non-stick spray.

    In a mixing bowl, combine the melted butter and brown sugar until well blended. Pour this mixture into the bottom of the prepared cake pan to create a caramel base.

      Arrange the pineapple slices over the butter-brown sugar blend, placing a cherry in the center of each pineapple slice for decoration.

        In a separate large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until combined.

          Add the milk (or reserved pineapple juice), eggs, and vanilla extract to the dry ingredients. Mix until fully combined and smooth, being careful not to overmix.
