1 pound breakfast sausage, crumbled

6 large eggs

2 cups milk

4 cups cubed day-old bread (sourdough or French bread)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/2 cup diced onion

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray or olive oil.

    In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes. Use a spatula to break it apart as it cooks. Remove excess grease if necessary and set aside to cool slightly.

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and black pepper until well combined.

        Add the cooked sausage, cubed bread, diced bell peppers, diced onion, and half of the shredded cheddar cheese to the egg mixture. Stir until everything is evenly coated.

          Pour the mixture into the prepared baking dish and spread it out evenly. Top with the remaining cheddar cheese.

            Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

              After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the casserole is set in the center. A toothpick inserted should come out clean.

                Remove from the oven and let it sit for 5 minutes before cutting. Garnish with chopped parsley for a pop of color.
