1 lb beef stew meat, cut into cubes

2 tablespoons vegetable oil

1 large onion, diced

2 cloves garlic, minced

2 cups bell peppers (red and green), chopped

2 medium carrots, sliced

1 can (14 oz) diced tomatoes, undrained

2 tablespoons tomato paste

3 cups beef broth

1 tablespoon sweet paprika

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon caraway seeds

Salt and pepper to taste

2 tablespoons fresh parsley, chopped for garnish

1 cup sour cream (optional, for serving)

Instructions
 

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    In the same pot, add the diced onion and cook until translucent, about 3-4 minutes.

      Stir in the minced garlic and cook for another minute, until fragrant.

        Add the chopped bell peppers and sliced carrots to the pot. Sauté for 5 minutes until slightly softened.

          Return the browned beef to the pot. Stir in the diced tomatoes, tomato paste, beef broth, sweet paprika, smoked paprika, dried oregano, and caraway seeds.

            Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally.

              Taste and adjust seasoning with salt and pepper as needed.

                Remove from heat and let cool slightly. Before serving, stir in the chopped fresh parsley for a burst of freshness.

                  Serve hot, topped with a dollop of sour cream if desired.
