1 cup strong brewed coffee, cooled

2 tablespoons unsweetened cocoa powder, plus extra for dusting

3 large egg yolks

2/3 cup granulated sugar

1 cup mascarpone cheese (room temperature)

1 cup heavy whipping cream

1 teaspoon vanilla extract

24 ladyfinger cookies

Dark chocolate shavings for garnish

Instructions
 

In a small bowl, mix the cooled brewed coffee with 2 tablespoons of cocoa powder until combined. Set aside.

    In a medium mixing bowl, whisk together the egg yolks and granulated sugar until the mixture becomes thick and pale, about 5 minutes.

      Gently fold in the mascarpone cheese into the egg yolk mixture until smooth and fully incorporated.

        In another mixing bowl, whip the heavy cream with vanilla extract until stiff peaks form.

          Carefully fold the whipped cream into the mascarpone mixture, being cautious not to deflate the mixture.

            Quickly dip each ladyfinger into the coffee-cocoa mixture for about 1-2 seconds (do not soak). Lay them in a single layer at the bottom of a rectangular or square dish.

              Spread half of the mascarpone mixture over the ladyfingers evenly.

                Repeat the layering process with another layer of dipped ladyfingers and the remaining mascarpone mixture on top.

                  Smooth the top layer with a spatula and dust generously with cocoa powder.

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

                      Before serving, garnish with dark chocolate shavings on top for an extra touch.
