2 cups strong brewed coffee, cooled

3 large eggs, separated

1 cup granulated sugar

1 cup mascarpone cheese

1/2 cup heavy cream

1 teaspoon vanilla extract

1 package ladyfinger biscuits (savoiardi)

1 ripe mango, diced

Cocoa powder (for dusting)

Fresh mint leaves (for garnish)

Instructions
 

In a large mixing bowl, beat the egg yolks and granulated sugar together until the mixture is pale and creamy.

    Gently fold in the mascarpone cheese until fully combined.

      In another bowl, whisk the egg whites until soft peaks form. Carefully fold the egg whites into the mascarpone mixture, being careful not to deflate the aeration.

        In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Fold the whipped cream into the mascarpone mixture until smooth and fluffy.

          Quickly dip each ladyfinger into the cooled coffee for just a second on each side (be careful not to soak them).

            In a suitable dish, create a layer of coffee-dipped ladyfingers at the bottom.

              Spread a layer of the mascarpone mixture evenly over the ladyfingers. Then, sprinkle a few diced mango pieces on top.

                Repeat the layers, finishing with a layer of the mascarpone mixture on top.

                  Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight for best flavor).

                    Before serving, dust the top with cocoa powder and garnish with fresh mint leaves and remaining diced mango.
