Ingredients

12 oz linguine or spaghetti

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 Italian sausage links (mild or spicy based on preference), casings removed

1 can (28 oz) crushed tomatoes

1 teaspoon sugar (to balance acidity)

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

1 cup fresh basil leaves, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Once hot, add the diced onion and sauté for about 3-5 minutes until translucent. Add minced garlic and sauté for an additional minute until fragrant.

Brown the Sausage: Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 6-8 minutes.

Add Tomatoes and Season: Pour in the crushed tomatoes, add sugar, dried oregano, and red pepper flakes if using. Stir to combine and let the sauce simmer for about 10 minutes, allowing the flavors to meld.

Incorporate Pasta: Add the cooked pasta to the sauce, tossing everything together until well coated. If the mixture seems too thick, gradually add reserved pasta water until the desired consistency is reached.

Finish with Basil: Stir in the chopped fresh basil, season with salt and pepper to taste, and allow to cook for another 1-2 minutes for the basil to wilt slightly.

Serve: Remove from heat and scoop the pasta into serving bowls. Top with grated Parmesan cheese and additional fresh basil if desired.
