12 oz penne pasta

1 tablespoon olive oil

1 lb Italian sausage (sweet or spicy, casings removed)

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Sausage: In a large skillet over medium heat, heat olive oil. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

      Add Garlic: Stir in the minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it.

        Incorporate Tomatoes: Pour in the crushed tomatoes, stirring to combine. Add dried oregano and red pepper flakes. Season with salt and pepper to taste. Let simmer for about 10 minutes to meld the flavors.

          Mix in Spinach: Add the chopped spinach to the sauce, stirring until just wilted, about 2-3 minutes.

            Combine Pasta and Sauce: Add the cooked penne to the skillet with the sauce, tossing well to coat. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.

              Final Touches: Stir in the grated Parmesan cheese until melted and well combined, adding more salt and pepper if needed.

                Serve: Divide the pasta into bowls or on a large platter. Garnish with fresh basil leaves and additional Parmesan cheese if desired.
