4 medium-sized potatoes, peeled and thinly sliced

1 medium onion, thinly sliced

6 large eggs

¼ cup extra virgin olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optionally, 1 small red bell pepper, finely chopped (for a twist)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onion (and red bell pepper if using) to the skillet.

    Season with salt and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned. Drain excess oil if needed and transfer the mixture to a bowl to cool slightly.

      In a separate bowl, whisk the eggs with a pinch of salt and pepper until well beaten.

        Once the potato-onion mixture has cooled, gently fold it into the eggs, ensuring that the potatoes are well-coated.

          Wipe the skillet clean and add a little more olive oil, heating it over medium-low. Pour the potato and egg mixture back into the skillet.

            Cook for about 5-7 minutes on the first side, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.

              When the bottom is set and lightly golden, place a large plate over the skillet and carefully flip the tortilla onto the plate, then slide it back into the skillet to cook the other side for an additional 5 minutes.

                Once both sides are golden and the tortilla is cooked through, transfer it to a cutting board and let it rest for a few minutes before slicing.

                  Garnish with fresh chopped parsley before serving.
