2 cups raw potatoes, grated

1 cup mashed potatoes (from leftover or freshly cooked)

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

Fresh chives, finely chopped (optional, for garnish)

Instructions
 

Start by prepping the ingredients: Peel and grate the raw potatoes into a bowl and squeeze out excess moisture using a clean kitchen towel. Combine it with the mashed potatoes in a large mixing bowl.

    In another bowl, whisk together the flour, baking powder, salt, and black pepper.

      In a separate bowl, whisk the buttermilk and egg until well blended. Then, add the melted butter to the mix.

        Slowly pour the wet ingredients into the bowl with the dry ingredients and mix until just combined. Add the grated and mashed potatoes to the mixture, folding gently until everything is well incorporated.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter. Once melted and bubbling, scoop about 1/4 cup of the boxty batter into the skillet, flattening it slightly to form a pancake shape.

            Cook for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 2-3 minutes on the other side. Repeat with the remaining batter, adding more butter as necessary.

              Once cooked, transfer the boxty to a plate and keep warm while you cook the rest.

                - Presentation Tips: Stack two or three pancakes on a plate, garnish with a drizzle of melted butter and sprinkle with fresh chives. Serve hot with sour cream, smoked salmon, or apple sauce on the side for variety.
