In a blender, combine the chopped pineapples, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until you achieve a smooth consistency.
Taste the mixture and adjust sweetness with additional honey or maple syrup if desired.
Add the coconut flakes to the blended mixture and stir gently to combine.
Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or until fully set.
To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.
Serve immediately, or wrap in plastic wrap and store in a freezer-safe bag for later enjoyment.
