Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.
In a medium bowl, combine the crushed graham crackers and melted butter. Mix until everything is well combined and resembles wet sand. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
In a mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
Add the sour cream and heavy cream to the cream cheese mixture, and continue to beat until well blended and silky in texture.
Pour the cheesecake filling over the prepared crust, smoothing it out with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center has a slight jiggle. Remove from the oven and let cool at room temperature for about 1 hour.
Once cooled, refrigerate the cheesecake for at least 4 hours or until set.
After chilling, lift the cheesecake out of the baking dish using the parchment overhang. Cut into bite-sized squares.
Drizzle each cheesecake bite with caramel sauce and sprinkle with chopped pecans and chocolate chips.
