Ingredients
  

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, with juice

4 cups chicken broth

1 cup kale, stems removed and chopped

1 can (15 oz) cannellini beans, drained and rinsed

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Stir in the minced garlic, carrots, and celery. Cook for an additional 5-6 minutes until the vegetables are tender.

      Season the mixture with salt and pepper to taste.

        Add the chicken breasts to the pot, followed by the diced tomatoes (with their juice) and the chicken broth.

          Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes, uncovered.

            After 15 minutes, remove the chicken from the pot and shred it using two forks. Return the shredded chicken back into the pot.

              Add the chopped kale and cannellini beans, along with the dried Italian herbs. Let the soup simmer for another 10-15 minutes until the kale is wilted and tender.

                Taste and adjust seasoning with more salt and pepper if needed.

                  Ladle the soup into bowls and garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese.
