4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach

½ cup feta cheese, crumbled

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together olive oil, minced garlic, oregano, basil, red pepper flakes, salt, and pepper to form a marinade.

      Place chicken breasts on a sheet pan and pour the garlic marinade over them, making sure each piece is well coated.

        Arrange the halved cherry tomatoes and fresh spinach around the chicken on the sheet pan.

          Roast in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

            Remove the pan from the oven and sprinkle the crumbled feta cheese over the chicken and vegetables.

              Return the sheet pan to the oven and broil for an additional 2-3 minutes until the feta is golden and slightly melted.

                Let it rest for a few minutes, then garnish with fresh basil leaves before serving.
