20 jumbo pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup spinach (fresh or frozen, thawed and chopped)

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 teaspoon red pepper flakes (optional for heat)

3 cups marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the jumbo pasta shells in salted boiling water according to package instructions until al dente. Drain and set aside on a clean kitchen towel to cool.

      In a large mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, spinach, minced garlic, Italian herbs, red pepper flakes (if using), salt, and pepper. Mix until well combined.

        In a small saucepan, heat the marinara sauce over medium heat. Once heated, remove from heat.

          Take a single pasta shell and fill it generously with the cheese and spinach mixture. Place the filled shell in a baking dish. Repeat the process until all shells are filled.

            Pour half of the marinara sauce over the stuffed shells to coat them.

              Sprinkle the remaining mozzarella cheese on top of the shells, and then drizzle the rest of the marinara sauce over everything.

                Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                  Once done, remove from the oven, allow to cool slightly, and garnish with fresh basil leaves before serving.
