1 ½ cups raw cashews, soaked for at least 4 hours

1 cup fresh strawberries, hulled and sliced

½ cup full-fat coconut milk

¼ cup maple syrup

¼ cup coconut oil, melted

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 ½ cups gluten-free graham cracker crumbs (or almond flour)

3 tablespoons agave syrup or additional maple syrup

A pinch of salt

Instructions
 

Prepare the crust: In a medium bowl, combine the gluten-free graham cracker crumbs, agave syrup, and a pinch of salt. Mix in the melted coconut oil until the mixture is well combined and resembles wet sand.

    Form the crust: Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup to pack it down tightly. Place in the refrigerator while you prepare the filling.

      Blend the filling: In a high-speed blender, add the soaked cashews, fresh strawberries, coconut milk, maple syrup, melted coconut oil, lemon juice, and vanilla extract. Blend on high until the mixture is completely smooth and creamy. This may take a few minutes; stop to scrape down the sides if necessary.

        Pour the filling: Remove the crust from the refrigerator and pour the strawberry filling over the crust, smoothing it out with a spatula.

          Chill: Cover the cheesecake with plastic wrap or a lid and place it in the freezer for at least 4 hours or until set.

            Serve: Once the cheesecake is set, remove it from the springform pan. Let it sit at room temperature for about 10 minutes before slicing.

              Garnish: Optionally, garnish each slice with additional fresh strawberries on top or a drizzle of vegan chocolate sauce for added flair.
