Vietnamese Cabbage and Shrimp Soup

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

4 cups vegetable broth

2 cups green cabbage, thinly sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

1 thumb-sized piece of ginger, sliced

2 medium tomatoes, chopped

1 small red chili, sliced (optional, adjust for spice)

2 tablespoons fish sauce

1 tablespoon soy sauce

1 teaspoon sugar

1 tablespoon lime juice

Fresh cilantro and green onions, for garnish

Salt and pepper to taste

Instructions
 

In a large pot over medium heat, add a splash of vegetable broth and sauté the sliced onion until translucent, about 3-4 minutes.

    Stir in the minced garlic and sliced ginger, cooking for another minute until fragrant.

      Add the chopped tomatoes and red chili, cooking until the tomatoes begin to break down, about 5 minutes.

        Pour in the remaining vegetable broth and bring to a simmer.

          Add the thinly sliced cabbage and cook for about 5 minutes until the cabbage is tender but still crisp.

            Gently add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.

              Season the soup with fish sauce, soy sauce, sugar, lime juice, salt, and pepper. Adjust to taste.

                Remove from heat and ladle the soup into bowls. Garnish with fresh cilantro and green onions.
