2 large zucchinis

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon lemon zest

Salt and pepper to taste

1 cup marinara sauce (for serving)

Olive oil for drizzling

Optional: Pine nuts for garnish

Prep the Zucchini: Slice the zucchinis lengthwise into thin strips (about 1/8 inch thick) using a mandoline or sharp knife. Lay the strips on a clean kitchen towel and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped basil, chopped parsley, lemon zest, salt, and pepper. Mix until well combined and creamy.

      Grill the Zucchini: Preheat a grill or grill pan over medium-high heat. Rinse the salt off the zucchini strips and pat them dry with a paper towel. Lightly drizzle the strips with olive oil. Grill each strip for 1-2 minutes on each side until tender and slightly charred.

        Assemble the Rolls: Take a grilled zucchini strip, place about a tablespoon of the ricotta mixture on one end, and carefully roll it up. Secure the roll with a toothpick if necessary. Repeat with the remaining zucchini and filling.

          Serve: On a serving platter, spread a layer of marinara sauce. Arrange the zucchini rolls on top of the sauce. Drizzle with a little olive oil and sprinkle with pine nuts if using.

            Final Touch: Optional - garnish with additional herbs or grated cheese before serving.
