Ingredients
  

2 cups cooked chicken, shredded

½ cup Buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

¼ cup green onions, finely chopped

10-12 egg roll wrappers

Vegetable oil for frying

Optional: ranch or blue cheese dressing for dipping

Instructions
 

In a large bowl, combine the shredded chicken and Buffalo sauce, mixing well until the chicken is evenly coated.

    Add the softened cream cheese, shredded cheddar, and chopped green onions to the bowl. Stir until all the ingredients are well blended.

      Lay an egg roll wrapper on a clean surface, with one corner pointing toward you (like a diamond shape). Place a generous tablespoon of the chicken mixture in the center of the wrapper.

        Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it tightly towards the top corner. Seal the edge with a little water to ensure it sticks. Repeat with the remaining wrappers and filling.

          In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once hot, carefully add the egg rolls in batches, frying until golden brown on each side (about 3-4 minutes per side). Remove and place on paper towels to drain excess oil.

            Serve the egg rolls warm with your choice of dipping sauce, such as ranch or blue cheese dressing.
